I made some delicious food this week and I am including a bonus recipe because I forgot to post it a couple of weeks ago!
Here’s the official version…
My version was delicious but I changed up a couple of things. I didn’t want to cut up sweet potatoes so I used some pre-done butternut squash from Kroger. This hits the EASY button in food prep and I advise you do that all you can.
In fact, if I have a limited time to prep I buy a lot of pre-cut stuff like fruit, peppers, onions, etc. It’s not the cheap route but it definitely is healthier, quicker, and long-term cheaper than eating out or doctor bills.

We also omitted cheese. When I reheated it, which it reheated beautifully all week, I added a little goat cheese to it. Yummy! This was Logan’s dinner one night where he also had a couple of fried eggs with it.
Again, two big hits that are reheating perfectly.
I first made my cauliflower rice. Super simple. Buy two heads of cauliflower, cut it up roughly and quickly, pulse in food processor, spread on a baking sheet lined with aluminum foil, drizzle with balsamic vinegar, cajun seasoning, and bake at 425 for about 40 minutes. I like mine really done!
Then while that was baking I was free to work on my recipes and such.
The Garlic Ginger Kale Bowls I didn’t have basil. I will say Logan wasn’t in love with this one but he ate it and said he wouldn’t want it again. I have adored it. Very good!
Logan’s bowl he used regular rice. I’ve been digging on the cauliflower rice.
This is the spicy fish bowls. I had mine on a big mix of Dole bagged salad tossed in a 100 calorie pack of guacamole.
I also used COD instead of tilapia. I love cod and it was on sale.
I also roasted some root vegetables with coconut oil and cajun seasoning. Logan loved them! I’ve had those along with the kale bowls.
I don’t normally try a lot of new things at once but I was like what the heck! Let’s just do it. It all turned out wonderful. I will make the garlic kale again next week! So easy and so good.
