Let’s kick things off with a video! I cover my prep stations in the kitchen, the definition of “food prep” and my basic tips to getting started.
This week I kept things simple and once I was done with the video this is the finished product of MY food. There were some random things I chopped, washed, and portioned for Chris and Logan, too. The whole thing start to finish was a tad over two hours.
Breakfast is a Blueberry Kodiak Pancake. I love them and TRUST ME, when I was 250 pounds I ADORED them. For me to keep the weight off I need food that tastes great and I look forward to. Pancakes is a definite must have in my book.
Instead of syrup, I put a packet of nut butter on them. I only had three packs of nut butter this week (whomp whomp), so a couple of days I’m eating almonds.
***The pancake mix is a lot cheaper at Costco if you have one near you. I’ve also seen it at Target.
Lunch is ground turkey seasoned with cajun spice, a baked sweet potato, and some beets! I buy the beets pre-cooked at Costco.
I love beets and they have a load of good nutrient benefits like reducing inflammation. I’m getting older (and better) so I do what I can to take care of momma!
Dinner is Mason Jar Salads. I use the Dole Salads that come pre-chopped with lots of crunchy vegetables.
On the bottom is a concoction I threw together: black rice, roasted corn, cilantro, green onion, lime juice and a little olive oil. It’s really good. I use a poppyseed greek yogurt dressing and add pan-seared chicken in coconut oil.
OH! I also toss these Good Bean Chic Peas on salads. They are super crunchy and whole lot better for you than croutons!
By the way, the chocolate ones are amazing in yogurt or with almond milk like cereal!
Food prep is one of those things that has truly been an evolution and a game changer. I never did it when I was overweight. I just rolled day to day hoping I was going to make good choices. I rarely made the healthy choice because I was too tired to come up with something good for me. I was all about quick and easy.
It finally dawned on me that I was looking for quick and easy. That can happen with healthy food and food prep was my life line. It’s why I stress it so much in the blogs and I discuss it weekly with my private members. I know how invaluable it is to feeling and looking good.
Food prep puts the quick and easy into my life along with NUTRIENTS!!!
